how to start an organic garden

We have started a backyard garden, quite large. we woud like to keep it organic. we are wondering?
how we could use household paper, ( soda cartons, junk mail) wold the dies hurt the soil? what other matter could we use to have fertile soil. we live in south florida. we have already tilled in 50 % horse poo. other organic matter is not available. thank you
we are mostly concerned about the paper products.
Save only your black and white newsprint. Put the rest of your paper for the recyling bin.
You are on the right track.. I assume you have tilled in composted horse manure, not the green stuff..
Let me say that organic gardening takes time..lol I know from personal experience. My best beds are the oldest, the worms and microbes have done a good job.
For the quickest return on your composting budget, worms are the way to go! You can either buy worm bins, make your own, or build mounds out in the garden. These lil buggers eat their weight in organic material every day, as well as aereating the soil and fertilizing your plants.
Research vermiculture and you can find tons of cheap ways to make your garden healthier without worrying.
